In honor of Jamie Oliver and his search for the next Food Tube star, I decided to toss my hat in the ring and give it a shot.  The challenge was to use rice as a main component in a dish.  I decided to make one of my favorite classic Philippine breakfasts, Tapsilog.  This dish is made of three main components, tapa (marinated grilled steak), itlog (eggs) and sinangag (garlic rice).  This is a very blue-collar dish, usually served in carenderias (sidewalk food stands) with a mug of hot coffee.  It is delicious and addictive between the savory rice, tangy beef, rich egg and piquant tomato salad.

 

Tapsilog

serves 2-3

Ingredients:

  • 2 cups white rice, cooked
  • 1 leek (or large shallot or medium-sized onion)
  • 1 head of garlic, minced, for divided use
  • 1 lb top sirloin steaks, <1 inch thick
  • 1 cup soy sauce
  • 1 cup white vinegar
  • 1 tbsp sugar
  • 3 large tomatoes, roughly chopped
  • 1 small onion, diced
  • juice from 2 limes
  • 1/4 cup fish sauce
  • eggs, fried
  • 5 tbsp canola oil, for divided use
  • salt and pepper
  • cilantro, for garnish

Procedure:

  1. Prepare marinade for steak by combining soy sauce, vinegar, sugar and 1 tbsp of minced garlic in a medium sized bowl and marinate steaks for at least 30 minutes
  2. Prepare salad by combining tomatoes, onion, lime juice and fish sauce; stir to combine and keep cold until time to serve
  3. Preheat grill to 350F or medium-high heat
  4. Heat 2 tbsp of canola oil in a wok over medium-high heat; once warmed, stir in leeks and garlic and let soften for 2 minutes
  5. Add rice, season with salt and pepper and lower heat to medium-low as rice continues to cook for another 5 minutes; Take off heat until ready to serve
  6. While rice is cooking, start grilling the steaks; leave undisturbed for 2-3 minutes before flipping to other side, let cook for another 3-4 minutes
  7. While steaks are cooking, start frying eggs to desired temperature
  8. Transfer the steaks to cutting board and let rest for 2 minutes to absorb the juices, then cut into thin strips
  9. Layer rice, steak and eggs on a warmed plate, and add tomato salad on the side
  10. Garnish with cilantro and enjoy!

    You inspired me! I tried this recipe today and it was delicious. I especially liked the leeks in the fried rice. Definitely making that again.
