Roasted Asparagus with Shallot Butter and Shaved Black Truffles

Black truffles are such a luxury.  Our local Farmers Market would carry them when they are in season- but a thumb sized piece can be worth about $50-100.  You do not have to add shaved truffles- but if you do, a little goes a LONG way.  You can use the truffles for other dishes such as risotto, filet mignon and other rich, equally indulgent food.  Once you taste it- you’ll understand the hype.

Roasted Asparagus with Shallot Butter and Shaved Black Truffles

serves 6


1 1/2 lbs of asparagus, tough ends removed

1 large shallot, finely chopped

1/4 cup unsalted butter

shaved truffles

drizzle of olive oil

salt and fresh ground pepper


  1. Preheat oven to 400F. Place the asparagus in a baking sheet, drizzle with olive oil, and toss with a pinch of salt and pepper.  Roast for 8-10 minutes.
  2. In a small saucepan, melt butter over medium-high  and add shallots.  Cook shallots until translucent and butter has browned.
  3. Toss the asparagus with the shallot butter and serve.  Top with fresh shaved black truffles.  Enjoy!
