Buttermilk Pancake/ Ebelskiver Recipe

I celebrated my birthday this past month- and one of the exciting gifts I received this year was an Ebelskiver pan!  Yes, I say this without irony!  I am genuinely excited about this awesome new kitchen toy.

Ebelskivers are light Danish, puffy pancakes that can be served for breakfast, dessert, hors d’oeuvres or even light supper depending on what filling you put- and they’re surprisingly easy to make.   It’s a nice twist to our weekend pancake tradition.

I used my regular Buttermilk Pancake recipe to create my Ebelskivers- which actually worked out wonderfully (to my surprise!)  There are other recipes out there that are made specifically for Ebelskivers, but my Buttermilk Pancake recipe turned out light and puffy.  I filled them with chocolate, peanut butter and strawberries.

Buttermilk Pancake/ Ebelskivers

Serves 8

¼ c butter, melted and cooled

2 c of all-purpose flour

¼ c sugar

4 tsp baking powder

½ tsp baking soda

2 ¼ c buttermilk

4 large eggs

  1. Sift all dry ingredients together in a large bowl, create a well in the middle
  2. Pour buttermilk and eggs into the well
  3. Stir wet and dry ingredients together until well blended
  4. Pour in cooled butter into the mixture and stir until smooth

Cooking Tips:

Pancakes

  1. Heat cooking surface with butter.  If using griddle- set temperature between 325-350 F (160-175 C) .  If using stove-top, set on medium-high heat
  2. Pour pancake butter into the hot surface by ¼ c spoonfuls- I recommend using either a measuring cup, or a ladle
  3. Flip pancakes as soon as small bubbles form on the edges of the pancake
  4. Serve immediately with syrup of choice

Ebelskivers

  1. Heat Ebelskiver pan on medium- high heat
  2. Melt 1/8 c butter on each Ebelskiver crater
  3. Pour pancake butter into the hot surface by ¼ c spoonfuls- I recommend using either a measuring cup, or a ladle
  4. Let cook for 2-3 minutes then add 1 tsp of filling of your choice (chocolate chips, jam, caramel, fresh fruit, etc.)
  5. When the edges of the ebelskiver lightly browns, using 2 skewers, gently flip the ebelskivers on its top.
  6. Let cook for 2-3 minutes to cook through
  7. Serve immediately with syrup of choice
