Brown Sugar Peaches with Ice Cream

So easy, but ridiculously delicious.  No, seriously.  Seriously.

Brown Sugar Peaches with Ice Cream

serves 6

Ingredients:

  • 6 peaches
  • Juice from 1/2 lemon
  • 4 tbsp unsalted butter
  • 1/4 cup firmly packed golden brown sugar
  • 2 tbsp dark rum (optional)

Procedure:

  1. Halve, pit and cut peaches into 1/2 inch slices
  2. In a bowl, toss peaches and lemon juice together; Set aside
  3. In a large frying pan, melt butter; Add sugar and brown sugar until lightly browned and sugar has caramelized for about 5 minutes; Remove from heat and swirl in rum if using
  4. Serve over vanilla or rum raisin or coffee ice cream
